A food post. I think I might occasionally do food posts. Today I cooked “Smokey Beans, Sausage and Egg” from the “Leon One Pot Vegetarian” cookbook, which my brother bought me for Christmas.
It came out like this:
This dish was chosen from the book by my eldest (21). He has Dubowitz syndrome which puts him on the autism spectrum, so trying new things can be challenging.
We swapped the cherry tomatoes for passata, so the sauce was smooth. I should’ve put about half as much passata in as I did. The eggs took longer than the book specified to cook through. No one likes slimy eggs.
Dylan ate and enjoyed it.
Rose (younger, with the same diagnosis & similar symptoms) was very upset by this meal and only ate the toast and a few nibbles of egg yoke.
I would rate this one as: Worth a go. A difficult dish for people who don’t like the components of their mixed together.
